Today, we’re layering up sexy hot pink with black chia seeds.

No time to do fancy layering? 

No problem – just blend them all up and you’ll still get a pretty pink hue!

Can you tell that chia seed is one of my favourite superfood (apart from flax and hemp seeds)?

That’s because it is loaded with omega-3s, protein and fibre plus it’s so versatile.

It’s one of those hyped up health food and now I see why.

You can sprinkle it on your salad, yoghurt, mix it in your oatmeal like this, make chia pudding like this, or smoothie like this.

Spotlighting on chia seeds, the ever versatile powerhouse.
  • ½ cup red dragonfruit
  • ½ cup of raw cashew nuts, soaked
  • 1 banana, ripe & frozen
  • ¼ cup chia seeds
  1. To make the red layer, place dragonfruit, cashew nuts , banana and ¼ cup of water in a high speed blender and blend till smooth. Set aside.
  2. In a glass container, add in chia seeds and water. Allow mixture to soak for 30 minutes. If chia pudding gets too thick, add a splash of water and stir. If chia pudding gets too diluted, add in more chia, stir and let it soak.
  3. Scoop the chia mixture into a tall glass followed by the red mixture. Repeat layers till the top.
  4. Serve and enjoy!
