03 Jul :: Dragonfruit Chia Layers ::
Today, we’re layering up sexy hot pink with black chia seeds.
No time to do fancy layering?
No problem – just blend them all up and you’ll still get a pretty pink hue!
Can you tell that chia seed is one of my favourite superfood (apart from flax and hemp seeds)?
That’s because it is loaded with omega-3s, protein and fibre plus it’s so versatile.
It’s one of those hyped up health food and now I see why.
Ready? Let’s go!
- ½ cup red dragonfruit
- ½ cup of raw cashew nuts, soaked
- 1 banana, ripe & frozen
- ¼ cup chia seeds
- To make the red layer, place dragonfruit, cashew nuts , banana and ¼ cup of water in a high speed blender and blend till smooth. Set aside.
- In a glass container, add in chia seeds and water. Allow mixture to soak for 30 minutes. If chia pudding gets too thick, add a splash of water and stir. If chia pudding gets too diluted, add in more chia, stir and let it soak.
- Scoop the chia mixture into a tall glass followed by the red mixture. Repeat layers till the top.
- Serve and enjoy!
